Description

Peñas Blancas is an exclusive lot from small producers in Acevedo, Huila, centered around the renowned farms of the Vergara, Lasso, and Gasca families.

The project brings together producers from the region and, thanks to its centralized processing center, provides them with access to specialized infrastructure, training, and better remuneration conditions.

The name Peñas Blancas refers to the impressive whitish rock formations that dominate the valley.

This lot is composed of Yellow Bourbon, a variety known for its sweetness, citrus acidity, and complexity.

In the cup, we find ginger, cherry, lime, and floral notes, creating an expressive and aromatic profile.

Process

This coffee has been processed using Natural Anaerobic Thermal Shock, with must inoculation.

The cherries are harvested fully ripe, between 22 and 26 °Brix, and then subjected to a precise thermal shock to prepare them for fermentation.

The coffee then undergoes 72 hours of anaerobic fermentation, followed by 24 hours of inoculation in must, the juice from the fermentation.

Finally, the cherries are dried using a combination of sun drying and mechanical drying, until the moisture is stabilized below 11.5%.

The result is a coffee with a complex expression, where ginger, cherry, lime, and floral notes stand out.
