Pink Bourbon Koji is one of the most advanced expressions in today's specialty coffee.
Produced at El Vergel Estate by Elias and Shady Bayter, this lot represents years of research into fermentation and biotechnology applied to coffee. The use of the Koji process—pioneered in Colombia—marks a before and after in how aromatic profiles are developed.
Cultivated at 1,460 meters above sea sea level in Tolima, this coffee combines the elegance of Pink Bourbon with an experimental approach that amplifies complexity without losing clarity.
The result is a vibrant, sophisticated, and completely distinct coffee.
Process
Processed using Koji Supernatural, a highly innovative method:
Cultivation of Aspergillus Oryzae (Koji) on rice
Application of the culture onto cherries on African beds
Controlled aerobic fermentation (24–72h)
Two-phase drying: solar + mechanical (<38°C)
Stabilization in GrainPro for 20 days
This process allows for the development of unique aromatic layers and exceptional complexity.
