This microlot comes from Campo Hermoso, Edwin Noreña's iconic farm in Circasia, Quindío, internationally renowned for its innovative fermentation processes and scientific approach to specialty coffee.
Cultivated at 1600 meters above sea level, this Caturra combines the potential of the Colombian terroir with a fermentation protocol designed to enhance aromatic complexity. The result is an expressive and clean cup, where ripe fruit, floral notes, and vibrant acidity coexist in perfect balance.
Process
Processed using Honey Pomegranate Co-Fermented:
Harvesting cherries with more than 20° Brix.
Selection and cleaning of the fruit.
Fermentation in a low-oxygen environment.
Carbonic maceration to develop a must rich in aromatic compounds.
Fermentation of the must with selected yeasts, allulose, and dehydrated pomegranate.
Reincorporation of the must into the coffee during a carefully controlled fermentation.
Slow drying in a greenhouse and stabilization before storage.
