Tres Dragones comes from Finca Potosí, in the municipality of Caicedonia, Colombia, the founding farm of Café Granja La Esperanza, and the birthplace of a processing method born of adversity. Tres Dragones takes its name from the three large mechanical dryers whose flames visibly flare during the initial drying phase, giving them the appearance of fire-breathing dragons.
The Colombia variety is a development by Cenicafé from the mid-1980s: a hybrid of Caturra and Timor Hybrid, combining rust resistance with greater flavor potential. At 1,860 masl in Valle del Cauca, and under the Tres Dragones protocol, its natural body and sweetness are amplified into something truly extraordinary.
The Tres Dragones Natural process at Finca Potosí includes: hand-picking selected Colombia cherries at their optimal point of ripeness; controlled low-temperature fermentation, with the whole cherries fermenting for approximately two days; drying in the three flame-fed mechanical dryers at about 40°C for two more days; and finally, drying on open patios for 15 days until optimal moisture is reached.
This three-stage processing is the defining approach: the low-temperature fermentation builds the deep dark fruit character and complex "boozy" note that define this lot; the heat and airflow of the mechanical dryers quickly and intensely set those compounds; and the final 15-day patio drying stabilizes and completes the profile. The result is an effervescent, full-bodied cup, with layered sweetness and an unmistakable identity.
In the cup, it stands out with notes of blueberry, chocolate, and wine.
