Description
This Red Honey coffee comes from Konga Washing Station, in Yirgacheffe, Ethiopia, and combines the Kurume & Dega varieties.
The station is located at 2,000 meters above sea level and receives cherries from over 400 small producers in the areas of Koke, Konga, Udessaa, and Birbirsa Kala. The cherries are separated according to processing method and quality, allowing for defined and consistent Yirgacheffe profiles to be maintained.
In the cup, we find cantaloupe and dried flowers that give way to a marked presence of ripe stone fruit and a syrupy sweet texture. A smooth and rounded acidity accompanies the coffee to a long, sweet finish with a honey character.
Process
In the Red Honey process, the coffee is de-pulped by removing the skin of the cherry but leaving a significant amount of mucilage on the parchment during drying.
The coffee is dried with more shade to slow down moisture loss and prolong the contact between the bean and the fruit sugars, developing a sweeter, fruitier, and more textured profile.
