Description
San Rafael is a coffee produced by Jhon Jairo Gómez on his farm of the same name, located in San Agustín, Huila (Colombia), at an altitude of 1,950 to 2,000 meters above sea level.
This lot of Tabi variety reflects the potential of high-altitude coffees in Huila, where the cool climate allows for slow ripening of the cherries, favoring greater complexity and clarity in the cup.
For years, Jhon Jairo produced high-quality coffee, but he didn't receive fair compensation for it due to the local practice of selling "green" coffee (wet and fully unprocessed). This changed in 2019 when he began working with his export partner, which allowed him to develop his own on-farm processing system, including a pulper and solar dryer.
Today, his work is part of the Monkaaba Project, a community initiative that supports small producers in San Agustín to improve the quality of coffee and their access to the specialty market.
Process
This coffee undergoes a washed process with extended fermentation. The cherries are carefully harvested and fermented for 24 hours in sealed bags before being pulped. The coffee then undergoes an additional 36-hour dry fermentation, which adds complexity and structure to the flavor profile.
After washing, the coffee is dried in solar dryers for 15 to 20 days, ensuring uniform and controlled drying.
In the cup, San Rafael offers a bright, complex and juicy profile, with notes of tropical fruit, a cranberry-like acidity and floral nuances, all balanced by a syrupy sweetness that adds depth.
