Process

Processed using the washed method with controlled stages:

Initial oxidation for 48 hours
Pulping and fermentation in sealed tanks for 24 hours
Full washing
Slow drying on patios for approximately 9 days

This approach allows for the development of aromatic complexity while maintaining cleanliness and structure.
