Description

Shakisso is a classic and refined expression of washed Ethiopian coffee.

Hailing from the Guji region, this lot brings together the work of approximately 500 smallholder farmers who deliver their cherries to the Hadeso station, where they are meticulously processed to highlight the clarity of their origin.

Grown between 1,850 and 2,100 meters above sea level, this coffee develops a light, bright, and tea-like profile, characteristic of the finest Ethiopian coffees.

The result is a clean, elegant cup with well-integrated acidity.

Process

Processed using the traditional Ethiopian washed method, focused on purity:

Selective harvesting of ripe cherries
Rapid depulping (6–8h after harvest)
Wet fermentation (36–48h)
Complete washing and density grading
Drying on raised beds under shade

This process ensures maximum clarity and aromatic definition.
