Description
Siko is a washed coffee from the Uraga region, Guji, in Ethiopia, processed at Siko Washing Station, where about 500 small producers deliver their harvests to be processed.
This coffee is composed of a blend of lots from smallholder farmers in the area, a common practice in Ethiopia where washing stations collect coffees from different producers to create unique profiles representative of the origin.
Cultivated between 2,100 and 2,250 meters above sea level, this coffee reflects the exceptional conditions of Guji, one of Ethiopia's most recognized regions for the aromatic complexity and elegance of its coffees.
In the cup, we find a clean, sweet, and nuanced profile. Notes of peach, apricot jam, orange marmalade, and florals appear in a balanced way, with a juicy sensation and a long, sweet finish.
In Ethiopia, coffee is usually grown in natural conditions, growing alongside other vegetation. Furthermore, exact information on varieties is not always available, so many lots are classified as Mixed Heirloom or landrace.
This genetic diversity is one of the great characteristics of Ethiopian coffee, as a single lot can contain numerous traditional varieties, providing great complexity and diversity of flavors.
Siko Washing Station was founded in 2017. It is a small station but focused on quality and improving the conditions of local producers. Many farmers work small plots of less than two hectares, and stations like Siko allow them to process and sell their coffees with greater value.
Process
This coffee has been processed using the Washed method.
The cherries are carefully hand-selected before the fermentation process begins. The coffee ferments for 24–72 hours, depending on climatic conditions, in closed tanks.
After fermentation, the coffee is washed in channels and sorted by density using water, removing lower quality beans. Subsequently, the selected beans are soaked for approximately six hours.
Finally, the coffee is sun-dried for about 13 days in thin layers and undergoes a final manual selection to ensure the quality of the lot.
The result is a clean and expressive cup, with a combination of ripe fruit, sweetness, and floral notes characteristic of washed coffees from Guji.
