Description
Siko is a washed coffee from the Uraga, Guji region of Ethiopia, processed at Siko Washing Station, where around 500 small producers deliver their cherries for processing.
As with many Ethiopian coffees, this lot brings together the production of numerous farmers in the area, creating a complex and representative profile of the origin. Grown between 2,100 and 2,250 meters above sea level, it offers ideal conditions to develop a clean, elegant cup full of nuances.
In Ethiopia, coffee often grows naturally alongside other vegetation, and the same lot may consist of different traditional varieties known as Mixed Heirloom. This varietal diversity is one of the most recognized characteristics of Ethiopian coffee and provides great aromatic complexity.
Process
This coffee has been processed using the Washed method.
Cherries are hand-picked and carefully selected before beginning a fermentation of between 24 and 72 hours in closed tanks, depending on climatic conditions. Subsequently, the coffee is washed in channels where it is also sorted by density, removing lower quality beans.
After washing, it remains soaking for approximately six hours and is sun-dried for about 13 days in thin layers. Finally, each batch undergoes a final manual selection to ensure maximum quality.
As an espresso, it offers a vibrant and balanced cup, with juicy acidity, pronounced sweetness, and a long finish. Notes of lemon cake, black cherry, and florals stand out, creating a clean and elegant experience.
