Description

Siti comes from a washing station that SEY Coffee is working with for the first time this year. The station is located in Siti, a sub-kebele of Worka Chelbesa, in the Gedeb region, Gedeo.

The coffee from this region has stood out especially this season, and this lot represents the evolution of SEY's work in identifying and separating unique coffees within the different zones of Gedeb.

A decade ago, much of the coffee from Gedeo was simply sold under the well-known name of Yirgacheffe. Today, it is possible to more precisely explore the different woredas of the region, including Gedeb, allowing for the discovery of the particular characteristics of each area.

In the cup, Siti presents a fresh and expressive profile, with watermelon, peach rings, white flowers, and citrus.

Process

The cherries are hand-picked at their optimal ripeness and then floated to remove defects.

They are then pulped and separated by density to obtain a Grade 1 lot.

The coffee ferments underwater for 36 hours and is then dried on raised beds for 10–14 days.

Ethiopia is widely recognized as the birthplace of coffee and boasts one of the world's greatest coffee biodiversities. DNA tests have confirmed over 60 distinct varieties growing in the country.

Due to the coffee tradition and the structure of the Ethiopian coffee trade, it is very difficult to obtain single-variety lots. Most Ethiopian coffees are composed of different local varieties and are usually referred to as Ethiopian Landrace.
