Produced at El Vergel Estate by Elias and Shady Bayter, this lot reflects years of innovation in processing and technical control, positioning the farm as a global benchmark in experimental coffees.
Located in Tolima and grown at 1,750 masl, this coffee combines agricultural tradition with advanced fermentation techniques, resulting in completely new and highly expressive profiles.
The result is a vibrant, juicy coffee with a distinctive character that blends fruit and spices.
Process
Processed using washed double thermoshock with yeasts, this coffee follows a highly technical protocol:
Controlled fermentation with selected yeasts
Application of "double thermoshock" to modulate compound extraction
Complete washing to maintain clarity
Drying and stabilization to set the profile
This process allows for a very precise and complex aromatic expression.
