Description

Sticky Pudding is DAK Coffee Roasters' special Christmas coffee, developed together with CATA Export in Colombia.

This Huila Bourbon is part of the Designed Coffees program, which uses controlled fermentations and botanical ingredients to create specific sensory profiles.

Its co-fermentation with cinnamon, cardamom, mandarin, and cherry produces a sweet, spicy, and festive cup, with notes of cinnamon, fresh fir, and cardamom.

A limited edition designed to celebrate the holiday season with a different coffee full of personality.

Huila - Colombia

Huila is one of Colombia's most renowned coffee-producing regions.

CATA Export works with a community of producers who follow shared harvesting, fermentation, and drying protocols to develop their designed coffees.

Cata Reserva, the flagship farm presented by CATA, is located in Timaná, Huila, at an altitude of 2,000 meters.

The property spans 30 hectares, approximately half of which is preserved as natural forest, and maintains a production approach that avoids chemical fertilizers and glyphosate.

CATA Export and Designed Coffees

Sticky Pudding is part of CATA Export's Designed Coffees program, where each coffee is developed from a specific sensory profile.

Instead of relying on a single farm, the program brings together different producers who use common protocols to maintain the consistency of their lots.

For this holiday edition, DAK and CATA selected a blend of cinnamon, cardamom, mandarin, and cherry, seeking a combination of warm spices, sweetness, and festive aromas.

Co-Fermented Washed Process

The process begins with a selection of cherries, at least 80% of which must be fully ripe.

After flotation sorting, the cherries undergo 24 hours of oxidation and are pulped without water.

Subsequently, the coffee undergoes 72 hours of submerged fermentation with yeast and a blend of cinnamon, cardamom, mandarin, and cherry.

Finally, it is mechanically dried for 76 hours at 40°C and stored in GrainPro airtight bags for stabilization.

This highly interventionist process allows the development of the spicy and aromatic profile that characterizes Sticky Pudding.

Sensory Profile

In the cup, we find cinnamon, fresh fir, and cardamom.

Cinnamon provides a warm and spicy sweetness reminiscent of Christmas desserts.

Fresh fir introduces a fresh and resinous sensation, evoking the aromas of Christmas trees.

Cardamom completes the profile with a spicy and aromatic character.

The result is a sweet, intense, and different cup, with a profile clearly inspired by the holiday season.

Available in roasts for filter and espresso, both in 200g format.

Dak Coffee Roaster

Dak was born from a true passion for coffee and a desire to embark on a journey of endless discoveries. We are located in Amsterdam.

We select our coffees based on their unique tasting profiles and, of course, being 100% traceable. We partner with importers who share our values and roast each of our coffees carefully to bring out the best flavors they have to offer.

We roast on an IMF machine that provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to develop properly in a shorter time. The result is clean, bright, and sweet coffees.
