Produced by the Vélez family at Finca La Luisa (Antioquia), this lot follows a clear approach: advanced, yet controlled, fermentations. Here, the fruit doesn't dominate — it integrates.
The result is a sweet, creamy, and very expressive profile, with "dessert coffee" notes that maintain clarity and balance.
A coffee that surprises without overwhelming.
Process
Processed using double carbonic maceration + strawberry, with a technical focus:
First fermentation in cherry (~5 days) in an anaerobic environment
Extraction of the generated must
Pulping and second fermentation (~3 days) with must + strawberries
Controlled drying (~5 days) for stabilization
This process allows for a sweet and complex profile without over-fermentation.
