Description
Strawberry Land is a coffee from Bolivia of the Ethiosar variety, a variety resulting from the cross between Sudan Rume and Sarchimor.
This lot uses the same varietal and process as last year's edition. The cherries are selected when they reach their optimal point of ripeness and, instead of undergoing fermentation, are dried whole in a container dryer with a constant airflow.
This method works similarly to fruit dehydration: it allows moisture to leave the cherries while the sugars remain and concentrate, contributing to the coffee's sweetness.
In the cup, Strawberry Land presents an intense and expressive profile, with notes of strawberry jam, amaretto, and dark plum. It has a slightly alcoholic character but maintains a very clean and defined cup.
Process
This coffee has been processed using a Natural method, with a particular drying process.
The cherries are selected when fully ripe and dried whole in a container dryer with constant airflow. No fermentation is carried out in this lot.
The goal is to remove moisture from the cherries through a process similar to fruit dehydration, allowing the sugars to remain and contribute to the development of sweetness.
