Description

Sweet Nectar is a special lot produced by Luz Helena Salazar at the Maracay farm in Colombia, at an altitude of 1400–1450 meters above sea level. This coffee represents the evolution of Castillo towards modern, expressive, and technically refined profiles.

The process begins with 30 hours of dry anaerobic fermentation, during which peaches are added to the fermentation environment. After this stage, the coffee is carefully washed and dried on raised beds at temperatures below 35°C until it reaches the ideal moisture content. The result is a bright, fruity, and surprisingly clean profile for a co-fermented coffee.

The Castillo variety, developed by the National Federation of Coffee Growers, stands out for its resistance and productivity, but in this case it also demonstrates its ability to offer a vibrant and elegant cup when the agronomic management and processing are precise.

In the cup, Sweet Nectar is intensely juicy, with a sweet sensation reminiscent of peach rings, accompanied by creamy hints of coconut and the delicate freshness of apricot. A modern, fun, and perfectly balanced coffee.

Ideal for filter and also for modern espresso where its fruit shines clearly.
