This lot comes from Edelweiss Estate, in the Karatu district, Arusha (Tanzania), grown between 1650 and 1800 meters above sea level on high-altitude volcanic soils.

The Batian variety, originally developed in Kenya from SL28 and Sudan Rume, was created to improve resilience and yield without sacrificing sweetness and cup clarity. In Tanzania, it finds an ideal environment to express its balance and clarity.

Process:
Controlled pre-fermentation before pulping
Carefully monitored dry fermentation
Complete wash
Progressive drying on African beds, starting in the shade and ending with greater sun exposure
