Description

Uraga Carbo is a coffee from Uraga, Guji, Ethiopia, a producing region whose microclimate has such particular characteristics that it has been recognized as its own coffee region.

The Uraga washing station receives cherries from producers in nearby areas. Guji farmers maintain traditional farming methods, typically intercropping coffee with other crops to make better use of their small plots and provide food for their families.

Most farms are also organic by default, using very little or no fertilizer or pesticides. Much of the farm work is done manually by the families themselves.

To improve the quality of the cherries, the Uraga washing station provides training to producers, especially on aspects related to the harvesting and transportation of the cherries.

In the cup, this coffee stands out for its notes of raspberry, cherry, and flowers, accompanied by a juicy texture and an expressive profile.

Process

This lot has been processed using Carbonic Maceration, a technique inspired by winemaking.

As in some anaerobic processes, fermentation takes place in a closed environment. However, while anaerobic fermentation is characterized by the absence of oxygen, carbonic maceration uses an environment rich in carbon dioxide.

This environment modifies the microorganisms capable of surviving and developing during fermentation, generating different microbial activities and, with them, particular flavor profiles.

The result is an especially expressive cup, with red fruit, flowers, and a juicy mouthfeel.
