Description

Vanilla Sky is a delightful expression of the Java variety grown by the Rodríguez family in Bolivia.

Produced at the Waliki farm in Caranavi, this lot uses the exclusive Coco Natural process developed by Buena Vista, designed to enhance sweetness, texture, and clarity without losing the origin's identity.

The result is a rich and enveloping cup, where the sweetness is reminiscent of homemade desserts and cooked fruit, with a slightly liqueur-like finish.

Process

Processed using Natural (Coco Natural):

Initial washing of the cherries
Patio drying for 48–72 hours
Transfer to Buena Vista static dryers
Controlled drying until 11.5% moisture

This method provides a creamy texture and very defined sweetness.

We roast on an IMF machine which provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to be properly developed in a shorter time. The result is clean, bright and sweet coffees.
