Traceability

The Western Valley is the most prominent coffee region in Costa Rica. Most of their coffees are grown under protective shade and produced in fertile clays.

The mountainous landscape is dominated by three volcanoes and a gentle tectonic depression, while Pacific weather patterns create well-defined dry and wet seasons.

Volcán Azul is located on the edges of the Poás volcano. For 5 generations, producers have continued to make coffee with the goal in mind of achieving excellence and superior quality.

Descendants of the founding families are acquiring natural tropical forest to protect and preserve the environment, and reduce air pollution and global warming. It is their way of contributing to a better future for future generations.

Visiting Costa Rica in March, we were able to catch up with Alejo, a fifth-generation producer. Sharing a V60 among the forest that covers the farm, he reminded us how special Volcán Azul coffee is.

Description

Process:
The process for this batch begins while the cherries are still on the tree. By constantly measuring the Brix sugar level, Alejo and his team try to identify the ideal time to harvest the coffee. The cherries are then sorted and moved whole to raised beds for slow drying.

Cup

Our natural processed batch is intense and fruity. Notes of dried figs, blueberries and apricot are sweetly balanced. Fragrant vanilla and lavender will appear as it cools, with a defined complexity that is a signature of the farm.
