From the mountains of Acevedo, Huila, comes White Lotus, a gem created by Joan Vergara, one of Colombia's most renowned producers and part of the prestigious Finca Las Flores project. His meticulous and experimental approach has positioned this farm as a benchmark for quality and precision in the world of specialty coffee.
This 100% washed Java lot features a clean structure, bright acidity, and a silky body. The cherries are depulped and allowed to oxidize with their mucilage for 12 hours, followed by an eight-hour submerged fermentation in water at 28°C. The process concludes with a thermal wash at 65–70°C, which provides clarity and highlights its floral and citrus nuances. A slow drying process of 18–24 days develops its creamy texture and refined sweetness.
The result is a sophisticated and balanced coffee, with notes of white flowers, kaffir lime, and white chocolate. A cup that reflects Joan Vergara's artistry and innovation, perfect for those seeking a filter of high complexity and purity.

We roast on an IMF machine which provides a high degree of control and consistency in our roasts. The machine uses a convection system that allows the coffees to be properly developed in a shorter time. The result is clean, bright and sweet coffees.
