Wilder Lazo is actually a veterinarian, specializing in livestock. When coffee prices continued to fall in 2016 and his father became seriously ill, he decided, along with his brother, to get the family farm up to date.
At first, his coffees scored between 80-83 points on the cupping table, despite elaborate processes and preparations. Wilder began examining soil samples and using specific nutrients and fertilizers to neutralize the pH, thereby increasing nutrient availability for the coffee trees. He calls it precision agriculture.
Anaerobic fermentation emphasizes the true character of the coffee, as most microorganisms work much more slowly compared to aerobic "fermentation" (which is actually more correctly called oxidation, since fermentation, by definition, is an anaerobic process).
Wilder Lazo ensures that the soil is very well supplied with nutrients. Afterward, the fully ripe and extremely large cherries are harvested and washed in water tanks to separate them from impurities and floaters. For this batch of Chiroso, the cherries were depulped immediately, placed in containers, and fermented anaerobically in the dry state, without water, for 36 hours. Fermentation inside the cherry emphasizes the fruit and the "funky" character, but in this Chiroso batch, the goal was to highlight the intrinsic flavors of passion fruit and lavender, along with a very vibrant aroma.
The parchment was then dried for 20 days on raised beds.
In the cup, one can also appreciate notes of yellow apple, an herbal character, lime, and a salted caramel sweetness.
