Description

William Ortiz - Chiroso is the third and final harvest offering of William Ortiz’s coffees, closing out the first year of working with his coffees.

This lot comes from Pitalito, Huila, where William grows Caturra, Pink Bourbon, and Chiroso. During this harvest, SEY Coffee acquired both his Pink Bourbon lot and this Chiroso lot.

Working with William has yielded some of the season's best coffees, and this last lot maintains that level of quality, showcasing a softer but equally complex tropical expression.

In the cup, we find melon and lime, with a tropical, fresh, and delicate character.

Process

The cherries are hand-picked at their optimal ripeness and then floated to remove defects.

They then remain in cherry for one night before being pulped. The coffee undergoes a 36-hour dry fermentation, after which it is washed.

Finally, it is dried on raised beds until it reaches a moisture level of 10.5%.

About William Ortiz

William Ortiz is a relatively recent addition to SEY Coffee's Huila exploration program. This lot is only the second coffee acquired from William.

He currently grows Caturra, Pink Bourbon, and Chiroso, and SEY Coffee hopes to continue developing this relationship and visit his farm on their next trip to Huila.

About Chiroso

Chiroso is a variety mainly grown in the Antioquia region of Colombia. Although its cultivation has recently begun to spread due to its potential for cup quality, there are still questions about how it originally came to Colombia.

Genetically, Chiroso has been identified as an Ethiopian Landrace, although its origin cannot be determined more precisely.

Its extraordinary cup quality has generated increasing interest within specialty coffee.
