Description
This lot is part of Right Side Coffee Roasters' direct-to-consumer project in Ethiopia, the birthplace of coffee. In this region, coffee trees grow mostly within lush native forests, making many Ethiopian coffees virtually organic by nature.
The coffee comes from Gedeb, a district located within the renowned Yirgacheffe region of southern Ethiopia. This area is known worldwide for its floral, elegant, and complex coffees, with a very distinctive sensory identity.
During recent visits to the source, Right Side has been able to work with small local producers who actively maintain their plots, a key factor in preserving the aromatic complexity that defines this region.
The traditional Ethiopian varieties grown here produce large, juicy cherries, but with small, compact, and dense berries, which contributes to the aromatic intensity in the cup.
Process
Hand-selected Grade 1 cherries (optimal ripeness)
Pulping with clean water at the local processing plant
Fermentation for approximately 36 hours
Complete wash
Drying for 15 days on raised African beds
In the cup, it offers a classic and refined Yirgacheffe profile:

The result is a floral, complex and elegant cup, with bright acidity and a clean structure that reflects the traditional character of washed Ethiopian coffee.
